Ingredients:
2 medium-sized eggplants
1 lb lean ground beef
3 eggs
1 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder
2 tbsp breadcrumbs
1 tsp garlic powder
½ tsp chili flakes
2 tbsp freshly squeezed lemon juice
3 tbsp oil
Skewers, soaked
Preparation:
Slice eggplants into half-inch thick slices. Generously sprinkle with salt and set aside for 10 minutes.
In a large bowl, combine ground beef with eggs, protein powder, breadcrumbs, garlic powder, chili flakes, and lemon juice. Mix well and shape patties (approximately 2-inches in diameter).
Brush a large, non-stick skillet with some oil and heat up over medium-high heat.
Rinse the eggplant slices and arrange on skewers along with ground beef patties. Grill for 7 minutes on one side – until lightly charred. Gently turn over and grill for another 5-7 minutes.
Serve immediately.
