Homemade Tuna Tortillas

These colorful tortillas are amazing for every occasion – breakfast, snack, or a light dinner. They’re combined with Blackbelt Whey Protein Concentrate Raw Protein Powder and then topped with oil-free tuna, corn, peas, and vegetables. You can add a couple of tomato slices and one tablespoon of Greek yogurt for even better taste. The options are endless. Enjoy them!

Ingredients:

Protein tortillas:

2 cups all-purpose flour

¼ cup corn flour

2 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder

1 tsp baking powder

2 tbsp unsalted butter, softened

1 cup water

Filling:

1 ½ cup canned tuna, oil-free and drained

½ cup sweet corn

2 oz fresh lettuce

¼ cup gouda, grated

½ cup red peas, pre-cooked

2 tbsp olive oil

1 tsp dried oregano

Preparation:

In a large mixing bowl, combine all-purpose flour with corn flour, Blackbelt WPC Plain Protein Powder, and baking powder. Mix well and add butter. Using a dough hook, beat well for one minute. Gradually add water and continue to beat for 3 more minutes.

Remove the dough from the mixing bowl and transfer onto a lightly floured work surface. Divide the dough into 15 equal balls. Roll out each ball into thin discs (6-inches diameter).

Preheat a large, non-stick skillet over medium-high heat. Place each tortilla into the hot skillet and cook for 2 minutes. Flip and continue to cook for one more minute, or until nicely golden on both sides.

Now, prepare the filling. In a large skillet, heat up two tablespoons of olive oil. Add corn and peas. Stir-fry for one minute. Stir in tuna and season with oregano. Continue to cook for 2 more minutes, stirring constantly. Remove from the heat and chill for a while.

Spread some of the tuna mixture over each tortilla, add fresh lettuce and sprinkle with grated gouda.
