Ingredients:
10 oz fresh spinach, finely chopped
2 cups potatoes, peeled and chunked
1 x 40 gram scoop Blackbelt Whey Protein Concentrate Raw Protein Powder
½ cup cottage cheese, crumbled
¼ cup milk
1 large egg, beaten
1 medium-sized onion, finely chopped
2 garlic cloves, minced
1 cup breadcrumbs
2 tbsp olive oil
1 tbsp butter
1 tsp salt
¼ tsp black pepper, ground
2 tbsp fresh lemon juice
Preparation:
Peel the potatoes and cut into small chunks. Place in a heavy-bottomed pot and add water enough to cover. Bring it to a boil and then cook for about 10-12 minutes, or until fork-tender. Remove from the heat and drain. Transfer to a large bowl and add milk and Blackbelt WPC Plain Protein Powder. Mash the potatoes until smooth and pureed. Set aside.
Melt the butter in a large skillet over a medium-high heat. Add onions and stir-fry for 2-3 minutes, or until translucent. Add chopped spinach and garlic. Stir-fry for 2 minutes, or until spinach is wilted. Sprinkle with salt and pepper and remove from the heat. Add the spinach to the potato mixture.
Now, add cottage cheese, egg, lemon juice, and egg. Stir until all well incorporated. Shape the mixture into 1-inch-thick patties and dip in the remaining egg, then in breadcrumbs.
Preheat the oil in a large frying pan over a medium-high heat. Fry patties for about 3-4 minutes on each side. Transfer to a paper towel to soak up the excess oil.
Serve immediately.
